Using a new type of ginjo yeast produced in Kumamoto Prefecture and a type of white koji having a similar nature with sake, we have fermented them at low temperature under strict temperature control. Features generated from such process are gorgeous fragrance with a ginjo aroma enhanced and a mild and fruity flavor.
