It is baked sweet potato shochu using Kogane-Sengan sweet potatoes produced in Kagoshima Prefecture for the ingredient and prepared with black koji. Sweet potato shochu is usually made by steaming sweet potatoes, but baked sweet potato shochu, as the name suggests, uses baked sweet potatoes for preparation. After baking sweet potatoes to a suitable state with the skin on but without scorching, it is prepared by crushing them without peeling off the skin. The shochu is rich in both taste and aroma with a feature of elegant flavor.
