Using barley for the ingredient, it is made by increasing the percentage of koji and fermenting it at a low temperature for a long time. The barley shochu has light flavor and fruity aroma. Its clear flavor with no unpleasant taste unique to vacuum distillation can be enjoyed by mixing with hot or cold water or also on the rocks.
