Making shochu with black koji, a method handed down from ancient times, and using the traditional technique of preparing shochu in earthenware pots with carefully-selected brown sugar, the shochu is created by atmospheric distillation to have a fragrant and deep taste. For storage, we use pots baked at 1200 degrees for maturation. The pots have countless micro holes, which allow them to breathe well, and the calcium and magnesium contained in the pots neutralize the acid in shochu, making it mild.
