It was jointly developed by Yamaguchi University, Yamaguchi Prefecture and our company in the late 1970's, as a distilled liquor made from sake just like making brandy from wine. The point is to reduce the distinct flavor, and condense the aroma and flavor of sake moromi (mash). This shochu has been popular for more than 40 years as a honkaku shochu representing Yamaguchi Prefecture.
