After mainly refermenting the daiginjo sake lees, fermentation liquor is squeezed out, which is vacuum-distilled, and then goes through frozen filtration. This is carefully matured for about 5 years and made into authentic shochu with an elegant and clearest aroma. You can enjoy the clear scent and the spreading flavor of rice.
