Iki in Nagasaki Prefecture is “the birthplace of barley shochu.
By sequentially preparing 1/3 amount of rice koji and 2/3 amount of barley in a barrel, and by selecting excellently flavored parts through distillation, it becomes authentic shochu matured by storing in oak barrels.
