This shochu uses a sweet potato, Nourinnigou, which was mainly cultivated in the early Showa era, and is hardly seen now. We grow this Nourinnigou at the Shochugura Farm, Yamamoto Shuzo’s agricultural corporation, and use it as a raw ingredient. We also use the underflow water from Kanmuridake Mountain, and carefully prepare it with black koji mold in an earthenware jar, finishing it by a method of filtration called Yamaage Nunokoshi. After all these processes, this excellent shochu is finally completed. Please enjoy the taste and aroma of the good old sweet potato by mixing it with hot or cold water.
