Kuro koji (black mold) is a traditional koji used in shochu production since ancient times in Ryukyu (the old name of Okinawa) and southern Kyushu. Shochu made with kuro koji is characterized by its unique aroma and deep flavor, however, this product is finished with a slightly lighter profile through vacuum distillation. Its rich aroma makes it an excellent pairing with a wide range of dishes, including seafood.
