Aiming to recreate the “nigori shochu” (cloudy shochu) of the past, which was said to be “white, cloudy, and delicious”, we carefully distilled this shochu in a small distiller and kept filtration to a minimum. Light filtration was necessary to ensure quality preservation, but this process resulted in the loss of the cloudy appearance. Yet, we take pride in having successfully captured the authentic taste of traditional “nigori shochu”.
