Komatsu Tatewaki is made using Kogane-Sengan sweet potatoes from Minami-Satsuma region, and is painstakingly made by toji brewers who have inherited the tradition of the Kurose Toji guild. The standard ratio for general potato shochu is 5 sweet potatoes to 1 rice malt, but we manufacture it with a unique blend balance where the proportion of rice malt is increased. By doing so, fermentation proceeds smoothly even at low temperatures, producing a taste that is smooth, light, and easy to gulp down, while firmly retaining the flavor of potatoes. You can enjoy however you like, whether mixing with water (hot or cold), mixing with soda, on the rocks, or straight.
