What makes Iki shochu different when compared to barley shochus from other areas is its use of rice koji rather than barley koji during preparation. Using rice koji creates a sweet and soft flavor. Moreover, Ikinohana features a rich but smooth taste by distilling it under normal pressure and aging it through the wasui jukusei procedure.
