The characteristic of Torikai is its aroma. It attracts drinkers from the top note to finish. It is a honkaku moromi (mash) shochu, not a sake lees shochu, made from our own method using ginjo-koji and self-cultured yeast. The fermentation takes twice as long as it used to.
