For the first fermentation, we use rice koji, while selecting Australian two-row barley—the perfect ingredient for creating a mugi (barley) shochu and polishing it to 60%. It features a fruity, citrus-like aroma, harmonizing with a distinct barley flavor and mellow sweetness. This is followed by a gentle depth that lingers, leaving a soft aftertaste.
