This is honkaku (authentic) sweet potato shochu. When taken in the mouth, you can enjoy such features as mellow aroma and taste as well as a scent unique to black koji. Using Kogane-Sengan sweet potatoes produced in Kagoshima Prefecture for the ingredient, elements of foreign odors are reduced as much as possible by carefully cutting off the stems at both ends. We use black koji, a kind of genseikoji (primeval koji), and filter the liquor through a method called “rough filtration.” We value the taste created with particular attention.
